Vineyards
The vines are centenary, of ungrafted planting of more than 120 years old, where there’s an abundance of more than twenty different types of castes. The schist soils live at 750m of altitude and the climate offers a wide range of temperatures in the maturation period. Given the vine’s age and the traditional processes of grafting and wine varieties, it is possible to find different castes originating on the same vine, which makes the viticulture process even more interesting and results in a final product that is curious, unique and with peculiar complexity.
Vinification
The harvest consist in grapes selected from different castes (about twenty). Soft crushing process. Peculiar pre-maceration and maceration. Fermentation occurs in 1000 liter mills with foot treading process. Stage of 24 months in used French Oak barrels, followed by bottling.
