Boina 2017 White
Vineyards
Grapes came from several small plots of old vineyards. All of them located on granite and, at least at 550 mts of altitude, with several different exposures.
Vinification and Aging
Grapes were carefully selected in the vineyards and harvested by hand. They were completely destemmed and crushed. Very gentle pressing. Clarification lasted 3 days. Fermented in stainless steel vats, at an average temperature of 16C. Stage for 5 months in stainless steel vats, with 3 months of lees stiring.
