Chão Rijo White 2017 White
Varieties and Soil
Traditional grape varieties, planted in "Chão Rijo", local expression to identify the clay-limestone soils of the region, about 10 km from the Atlantic Coast and an average of 130 m of altitude.
Climate
Strong Atlantic influence, with summers of moderate temperatures, strong and salty winds. The presence of the Serra de Sintra, in the South, leads to the formation of fog and the maintenance of high relative humidity.
Winemaking
Final harvest September. This wine is the result of a careful vinification by the classic "open spout" process, with total destemming and immediate pressing. The resulting wort was cooled (5 ° C) and statically decanted overnight. Fermentation in stainless steel tanks with temperature control (15-16ºC) for 14 days. Stage on lees for 3 months. Bottled in June 2018.
