Vinification
Grapes are destemmed and sent to “vinimatics” for 6 to 10 hours at a temperature of 12ºC. Then they are pressed and sent to a refrigerated chamber for fermentation at 13 to 15º C.
Ageing
The must ages in new barrels of Hungarian (Tokaji) oak, followed by “batonnage” period.It has obtained its complexity, volume and persistency while ageing in french oak barriques. After ageing, the blend bottles have been submerged in the calm and peacefull waters of Alqueva's big lake waters, nearby to Amieira Marina, where it maturated for 8 months in unique and excelent conditions at 30 m deep.
