Flor de S. José 2015 White
Origin
Higher areas of the Douro, with an altitude between 450 and 500 meters, allowing a good temperature range. These conditions are extremely important to mature slowly in order to preserve the flavors of the grapes variety, its freshness and acidity.
Vinification
Grapes harvested by varieties and plots in 20kg boxes and put in cold 5/6 ° C. After destemned are crushed. The mash was pressed and decanted rose to achieve the necessary clarity. Fermented at a temperature between 14/16 ° C in a tank for 3 weeks, with the aim of enhancing the primary aromas. The wine was subjected to a glue before being bottled.
