Origin
Grapes coming from several mini plots of old vines, located in an area of granite soils at more than 550 meters of altitude, having several different exhibitions.
Vinification
Reception with total disengagement followed by maceration for 5 hours in the press. Very soft pressing. Clarification at 7ºC for 3 days. Fermentation in very old French oak barrels. 12 months in stainless steel vats with batonnage of which 40% were trained in very old French oak barrels for 9 months.
