In-fi-ni-tu-de Pinot Noir Red

Family Osório de Vasconcelos Jardim Gonçalves’ farm, located on the north foothill of Sintra’s mountains, 5km from the Atlantic Ocean and 25km from Lisbon.
An innovative bet in classical french castes, planted on the half-slopes in clay-limestone soils, around 5km from the Atlantic Coast and at an altitude of about 90m. The climate has strong Atlantic influence, with moderate temperature summers. The mountains of Sintra bring frequent fogginess and a moderately high humid environment.
Viticulture
Doubled-string guiding system. Extensive farming, in compliance with the Integrated Farming philosophy and minimum intervention. Slow and balanced maturation.
Vinification
Beginning September harvest. This wine is the results of a cared vinification, throught the classical tanning process, with parcial destemming. The resulting grape must, fermented in temperature controlled (26°C-28°) in stainless steel vats, for 12 days. 30% of the batch staged in french oak barrels for 20 months, in the mythical Adega Regional de Colares. Batched and bottled in April 2017.

An elegant and delicate wine, with classical notes of cherry, sour cherry and cedar with a smoked hint. In the mouth it is dry, lively and lightly toasted. Very long and balanced, with salty persistant notes, with great freshness. | |
