HARVEST AND VINIFICATION
Harvested the last week of August.
Cool weather with fog mornings.
Balanced maturation, with harvest of 3 passages.
Fermentation with temperature control at 14 ° C.
Grapes transported in perforated boxes of 15 kg. Slight pressing with dry ice cooling. Fermentation in stainless steel.
Bottled in February 2014 according to the the classic Champagne method, staying in stage on lees for about 3 years.
Dégorgement without added sugar - Brut Nature.
