Kompassus Private Collection 2011 Red
Full and opulent, perfumed with spicy notes, clay, red and black fruit, very complex, austere and elegant. Powerful but with velvety texture, very fresh acidity, long, seductive, but always serious and reserved.
HARVEST AND VINIFICATION
Harvested on the 3rd week of October. Harvesting in dry and hot weather - 35 ° C. Balanced maturation. Harvest with two choices. Fermentation in open mill with 20% of stink and steps on foot. 22 months of aging in new and used 400 and 700 liter barrels.
