Mariposa Encruzado 2015 White
Concept
Mariposa wines are made in a natural way, preserving to the maximum the natural aromas of the grape varieties and the natural acidity of the region's grapes. They are intended light and fresh, to consume young but, being Dão, will have a good evolution in bottle.
They are modern wines but they demonstrate the character of the region well.
Winemaking
The grapes were harvested manually for small boxes of 20 kg, with selection in the vineyard. The grapes were again selected on carpet of choice, were cooled to the entrance of the cellar and immediately pressed. Part of the must was transferred to new French oak barrels, where it completed the fermentation and where it remained about 6 months. The rest of the wine, about 3/5, fermented and staged only in stainless steel.
Ageing
Part in French oak barrels of 225 and 500l and the rest in stainless steel deposits.
