Mariposa Encruzado 2016 White

Concept
The Mariposa wines are all crafted in a natural way, preserving the original aromas from the castes and the natural acidity of the grapes of this region. They are intented to be light and fresh and to be consumed while young, although, as wines of the Dão, they also have good aging potential on the bottle. They are modern wines that, at the same time, reflect very well the character of the region.

Mainly granitic, slender and with rocky outcrops.

Climate
Mixed with Mediterranean and Atlantic influences.

Vinification
The grapes are harvested manually and sorted at the vineyard into small 20kg boxes. They are sorted once again at a conveyor belt afterwords. After this, they are cooled at the entrance of the cellar and pressed imediately. Part of the resultant most is transferred into new French oak barrels, were they complete the fermentation process and remain for about 6 months. The rest of the wine (about 3/5) only fermented e staged in stainless steel vats.
