daily temperature range.
Soil:
Schist and Limestone.
Winemaking:
Manual harvest. Total destemming. pre-fermentation cold maceration for 3 days. Fermentation in tanks with temperature control to 26 / 27ºC.
Ageing:
1 year in French oak barrels of 300L (80% new).
