Winemaking
Most of the grapes were selected and picked in Falorca vineyard, 30years of age, and a very small part in Esmoitada vineyard, 80+ years of age, to bring more complexity to the wine. The grapes were hand picked with extreme care to cases of 18 kgs, were taken to the cellar, and remained a full night so that they could be at a lower temperature before the process started. They were then foot treaded in a very old granitic lagar, and the fermentation was made in the barrels.
Ageing
75% in 1st year, 25% in 2nd/3rd year 225 l. French oak barrels for 18 months (blend made with Radoux – Evolution fine-grain, Cadus and Seguin Moureau), and in the bottle.
