Winemaking
The grapes were selected and picked manually in Falorca and in Vale das Escadinhas vineyards, 40 years of age. They were hand picked to cases of 18 kgs, taken to the cellar and remained a full night to lower the temperature before the process started. They were then foot treaded in a old granitic lagar, and the fermentation was partially made in the barrels.
Ageing:
50% in 1st year, 50% in 2nd/3rd year 225 l. French oak barrels (18 mths) and then stainless steel vats (18 mths)
