Winemaking
Grapes harvested by hand, for boxes of 25 kg, at their ideal point of ripeness; and they are expected to show vigorous maturation, leading to higher aromatic and polyphenolic concentrations. After soft crushing and total destemming, the grapes are fermented in stainless steel tanks and mills, thus allowing the quality constituents present in the films of the very ripe grapes to pass smoothly to the wine. After malolactic fermentation, the wine was aged in new and used French oak barrels of 400 liters, for approximately 12 months.
