Viticulture
Organic production with a single plot managemement winegrowing work.
Soil
Lime and clay from the superior jurassic period. Twenty hectares with different expositions and slopes.
Climate
Mediterranean microclimate with an Atlantic influence. Cold nights even during summer, max. temperatures of 31ºC, 675 mm average rainfall and a permanent blowing wind.
Vinification
Plot winegrowing work from the harvest to the end of the ageing process. Handmade harvest, with manual sorting. Destemming with no crushing. Fermentation in stainless steel vats at controlled temperature. 50% fermented and aged for about 6 months in new French oak barrels (500L).
