Ribeiro Santo Grande Escolha 2011 Red
Region
The Demarcated Region is one of the oldest Wine Regions of Portugal, dating back to 1908. Located in the center of Portugal, in the mountainous region ranging from 400 to 700m above sea level, has as a reference point the Serra da Estrela, the most High continental Portugal. Its name comes from the river that crosses the river Dão.
The characteristics of the wines are strongly marked by granitic terrain and the fact that the vineyards meet inserted in forests of pine and eucalyptus.
Vineyards
The vineyard follows the traditional vine varieties and was planted in a poor granitic terrain with large rocky outcrops, which overlooks the Serra da Estrela. The entire vineyard is in Integrated Production scheme demonstrating great concern for environmental issues. The combination of cultural practices associated with the judicious use of biological environment-friendly products originates balanced productions.
Winemaking
The harvest took place at the end of September. The grapes were harvested by hand, in small boxes of 18 kg, according to a careful selection of the best grapes in the vineyard. The grapes were destemned small stainless steel tanks, where macerated 24 hours at low temperature, before starting the alcoholic fermentation, with selected yeasts and controlled temperature. Fermentation lasted about 15 days, with foot treading for a good extraction of color and aromas. After fermentation, it was discharged into containers for new French oak barrels, where it remained 14 months until bottling and after bottling remained a minimum of 6 months in the bottle in a cool basement.
