Vinification
Manual harvest from vines planted in clay-limestone soils. Soft crush, refrigerated must, slowly pressed. Cold decantation for 48h followed by a long fermentation period in stainless steel vats at 12ºC for about 50 days, contact with fine lees until bottling.
