Dona Berta Tinto Cão Reserva 2011 Red
Concept
The design of this wine had the basic idea of expressing the character of one of the best Portuguese grape varieties - Tinto Cão - in the terroir of Freixo de Numão, characterized by an altitude between 400 and 600 m, in the middle of the Upper Douro, which allows slow and Late vintages.
Castas
Tinto Cão 100%. The year 2011 was exceptional in the Douro, allowing a perfect maturation of the grapes, which made possible the production of a wine already very attractive and with great potential of guard.
Technology
After the crushing of the grapes with destemming and disinfection with a minimum sulfurous dose, selected yeasts were inoculated. The fermentation took place in a small stainless steel vat at a temperature between 28 ° and 30 ° C, and aeration is regularly performed. After the malolactic fermentation, the wine completely aged in wooden barrels for one year. The bottling took place about a year and a half after the harvest and the stabilization of the wine was limited to a slight glue, followed by filtration. It has not stabilized by the artificial cold and can therefore form a slight precipitate over time, which in no way impairs the quality of the wine.

Skills
While new, it is especially suitable for strong dishes and intense flavors, such as rojões, fried cod or pork rib roasted in the oven. With the time of bottle it gains complexity and rounds the tannins, becoming the ideal companion for the leg of lamb or the kid in the oven.
