Winemaking
Manual harvesting for 20 kg boxes. Pre-fermentative cold maceration with foot-step for 2 days. Fermentation in stainless steel vats with temperature control, long post-fermentative maceration. Pressing in vertical press. 12 months in new French oak barrels of 300L.
